David Aitken

Head Chef, based in Alp d’Huez, France

 

Talk us through a typical day within your role?
A typical day begins with a team meeting with staff to discuss the day’s plans and menus. Next, I check off any deliveries, ensuring that no stock is damaged or spoilt and making sure that it’s all there. I also place orders for any stock required, depending on order and delivery days. When working with food, health and safety is a priority, so I monitor fridge and freezer temperatures twice daily and take high risk food samples three times a day. I also ensure that COSHH & HACCP regulations are followed, overseeing others to follow the correct procedures whilst supervising during preparation of meals and answering any questions that team members may have.

What do you love about your job?
One of the main things I love about my job is being able to teach new skills to more inexperienced chefs. I remember starting out as a chef ten years ago and how it felt to have a mentor that I looked up to.  It is very rewarding to manage other chefs so that they can cook the standard of food expected by our differing clientele whilst being part of a successful team. It is especially rewarding when I see passion and flair from a chef and watch them use the ideas and methods of preparation I have shown them to create a dish.

What’s great about working for SkiBound? 
I love the fact that with SkiBound everyone is a team whether you are a part of management, a general assistant, on the bar or in the kitchen. I also love the fact that you get plenty of ski time in the winter and the chance to enjoy the summer sun if you do a summer season.

Tell us an Interesting Fact about yourself 
I have worked in Scotland, Austria, Greece, Spain, Switzerland and France, seen many different cultures and made lots of new friends on the journey.

The Head Chef, along with the team of Commis Chefs are responsible for serving a nutritious and filling menu for our hungry guests. The planning, budget, ordering and of course, the preparation and service of food together with maintaining high levels of hygiene, safety and cleanliness in the kitchen is key.

The Hotel Management team ensure the profitable day-to-day running of the hotel, motivating the team and ensuring company standards are adhered to.

If you have hospitality management experience and are looking to transfer your skills over to the Alps this summer or Winter then we have a number of roles available to suit your skill set and experience level. Whether you start as a Housekeeping Supervisor, Assistant Hotel Manager or a Hotel Manager you will have the opportunity to lead, motivate and inspire your team to provide exceptional service to our customers and maintain service levels. You also have the opportunity to develop yourself through our in-house development program, meaning that you are always learning new skills and working towards your career goals whilst being supported by our senior management teams.

To work within our Hospitality team, you need to have a genuine passion for customer service, working with children and the willingness to go above and beyond the call of duty for our customers, always looking for opportunities to make their experience that little bit more special and unique.

General Assistants work in the hotel restaurant, bedrooms and public areas, providing high standards of cleanliness and service at all times. It may also be necessary to work in other areas of the hotel i.e. bar and kitchen.

Kitchen Porter/Night Porter, a dual role, involving washing up after each meal and ensuring that the kitchen is left in an immaculate and hygienic state together with ensuring the safety and security of the hotel guests and the building itself throughout the night.

We occasionally have vacancies for Bar Staff, French Speaking Bar Staff and a Handyperson.

Ski Rep & Ski Technician

Working within our Operation’s Team gives you the opportunity to provide our customers with excellent customer service and advice in order to ensure that customer’s expectations are exceeded, financial and service targets are achieved and repeat business is generated.

You will play a vital part in ensuring that our schools go home happy and that they leave with heightened memories of their time with us in the mountains.
